With a passion for making chocolate and a passion for eating chocolate, Marlin started making chocolate bon bons, slabs, and testing new flavours colours and shapes while trying to find the perfect bite of chocolate. He began sourcing and roasting his own beans to control the quality and consistency of the amazing chocolate products that Mayan Chocolate Company produces. Today, Mayan Chocolate Company is an artisanal chocolate studio located in Food Lovers Market in Knysna and George along the Garden Route. We produce in small batches by hand resulting in an exceptional chocolate with a quality that speaks for itself!
We make our chocolate from high quality single origin raw cocoa beans, imported from Peru. The beans are roasted at low temperature to develop their flavour and then winnowed to separate out the nibs. These cocoa nibs are then conched for 72 hours to produce a silky delicious chocolate. The final stage of tempering produces the perfect crystals to make a smooth ‘snap in your mouth’ chocolate which we then mould and create into our various products. ‘Bean to bonbon’
